A perfect vegetable Dish to go with your Fish! This fennel has been slowly poached in Pernod and Extra Virgin Olive oil before roasted in a cast iron pan, its super tender and juicy. Its then tossed with Grilled peppers that have been glazed in a sherry vinegar and is garnished with raw fennel, pickled Fresno chilis for spice and fennel fronds! This would be amazing with a white fish, salmon, trout or shellfish!
