One of our favorite local fall fish, these pelagic wonders are lean, delicate and intensely flavored. The key with Albacore tuna is to get them quickly bled, slushed and to market before they soften. Nearly all the albacore on the market comes from previously frozen off of these ''trip'' boats. Dayboat is key here and these fish are not to be missed.
