Northern anchovies schools are caught and held in live pens in the SF Harbor as baitfish for commercial and recreational industry - harvested live each morning and iced before shipping. They are an abundant resource, rich and oily in flavor and delicious when fresh. They are great fried or grilled fresh or salted for future culinary endeavors.
Pro-tip: letting them rest a day helps with cleaning and filleting. Scale them under running water by running your thumb opposite against their scales.
