A wonderful part of our ''Whole Fish Program,'' these trims are off-cuts from our #1 bigeye or #1 yellowfin fish. They are sashimi grade, ready for poke bowls or the grill. It's also a great option for scraping into tartare or salting and confiting for a three-star nicoise salad.
